They don't allow you to use Domains from another company (such as godaddy, etc) do they?
I can't find nameservers, or anywhere to set them up.

If you have a hosting account with them you can. I had one with them for a while.
Go your CP under manage domains New > Add Domain
Type in the domain name registered else where.. Press next.
On the next page hit the option "Point DNS to 1&1 name servers and keep your current registrar"
It will give you the name servers normally ns57.1and1.com and ns58.1and1.com. Then go to GoDaddy and update the name servers as normal. Press Next
Your domain will be ready for action in about 24 hours.
Edit: If you look at the hosting page: http://order.1and1.com/xml/order/Hosting the "Host External Domains" column under your plan is the limit to the amount of external domains you can host.

For what it's worth, if you plan on doing any kind heavy duty websites 1&1 isn't the place for you, your sites will slow to a crawl. Plus the database caps @ 100MB is pretty restrictive.
I'm not surprised you couldn't figure out how to hose an external domain @ 1&1. 1&1 tries to make it as hard as possible to not give them money at every turn.. Canceling domains and/or a hosting package is even convoluted.
